I was experimenting a little with thanksgiving food this weekend, and candied sweet potato seems to be an obligatory classic.
I was doing it a bit differently and this version turned out really well!!
This is such a simple and natural dessert, really tasty and super easy.
Basically, I just roasted some large chunks of sweet potato in the oven until they were soft.
Then mashed them in a bowl and added some cinnamon (add a little butter or nut butter too unless you want it paleo), poured the mixture in a small ceramic dish, drizzled with honey, sprinkled some crushed nuts on top (walnut and hazlenut), and back in the oven again until the nuts are a little toasted.
I served mine with coconut cream and it was absolutely brilliant!
